Golden Giant Cheese Given High Praise MADISON (PG) - Wisconsin'! Golden Giant Is not only the world' laWt cheese, but it has Quality to match, according to official word from the Wisconsin Cheese Foundation. The cheese was made by Steve Suld-tinskl at the Steve's Cheese Plant at Langes Corners, Brown County. A. A. Suemnlcht, president of the foundation, said three expert graders made more than SO Individual tests of the 17V-ton Cheddar at the New York World's Fair. They all came up with superlative findings concerning the quality, texture and aroma of the 34,591-pound cheese that has been the showpiece of the Wisconsin Pavilion inca the Fair opened in 1964. Ronald Johnson, a Mount Sterling cheesemaker and a licensed cheese grader, represented the foundation at the grading. Johnson said he gave the huge cheddar an unquali fied "excellent" after he had mad 26 individual -plugs or tests. "I would not hesitate to name this of Wisconsin State Brand quality. In fact, I could not score this cheese any less than t7:00," Johnson declared. "The body, texture and flavor were all uniformly excellent." John son, who won the 1958 World's Cheddar Championship, has made several trips to the ex hiblt In New York on behalf of the Cheese Foundation. Grading wltn Johnson were Donald P. Weber, representing the Department of Agriculture, and Eugene Irish, marketing manager of bulk and loaf cheeses for the Berden Compa ny. Both corroborated Johnson's findings of the high standard of uniformity In flavor and aroma throughout' the huge cheese which stands 5 feet high, 6tt feet wide and 14V4 feet long. The Borden Company, which purchased the giant cheese from the Wisconsin Cheese Founda tion, will announce before the Fair ends what disposition it clans to make of the record- breaking cheddar.
