Sautéed Sardines with Odong Noodles is one of my favorite sardines recipe. It’s been years since we had this. For reasons I don’t know my mom doesn’t buy odong noodles for years. It’s only when I asked her that she bought few packs of this yellowish egg noodles.
Odong Noodle is a yellowish type dried egg noodles. Its usually around 6 to 8 inches long and looks likes packed yellow sticks. It was first introduced to us by our neighbor’s helper. Since then, it became part of our go – to ingredients for sautéed sardines.
If you are a regular reader of this blog, you may have noticed that I love sardines. It’s our go – to dish when we are tired of eating meat. The thing is, it’s so easy to prepare and it’s very affordable. Two small cans of this can already served a family of four. You can check out Sardines Recipe for my canned sardines dishes.
Sardines with Odong Noodles is so easy to prepare. Simply sauté the sardines in garlic, onion and tomatoes. Add some water and the odong noodles and let it simmer until the noodles are al dente. I added few tablespoons of oyster sauce to give it additional flavor and used fish sauce to season it instead of rock salt. Well, I’m a fish sauce person. It is much flavorful compared to your regular salt.
You might observed that in a soup – based dishes I always use rice wash instead of regular water. It’s because rice wash contains some nutrients and flavor, and it would be such a waste if you just throw it away. Simply strain it using a very fine strainer and it’s good to go. You can use water instead or even meat broth.

3 Tablespoons | Olive Oil |
6 cloves | Garlic, minced |
1 bulb | Onion, chopped |
3 pieces | Ripe Tomatoes, diced |
1/2 cup | Rice Wash or Water |
155 grams | Regular Sardines in Tomato Sauce |
155 grams | Spicy Sardines in Tomato Sauce |
2 cups | Rice Wash or Water |
2 Tablespoons | Oyster Sauce |
30 grams | Odong Noodles |
Fish Sauce | |
Ground Black Pepper | |
Chives, chopped | |
Hard Boiled Eggs |
Procedures
In a hot pan, saute garlic, onion and tomatoes in olive oil. Add rice wash and cover until the tomatoes are soft.
Press the softened tomatoes with the back of your wooden spoon to release its juice.
Add the sardines, rice wash and oyster sauce. Let it simmer for 10 minutes.
Add the odong noodles and simmer until the noodles are al dente.
Season with fish sauce and ground black pepper.
Garnish with chopped chives and hard boiled eggs.
