Shortbread biscuits filled with jam

This classic Raspberry Jam Drops recipe is just like the one I grew up with. These biscuits are made with a simple egg free dough and they also contain custard powder for a delicious hint of sweetness.

Adapted from "Thumbprints" from Cookies at Home with The Culinary Institute of America by Todd Knaster. The original recipe says it will make about 3 dozen small cookies, but I got 54 cookies when I made the balls about 1" diameter.
