Jaggery is an unrefined crude brown sugar. It can be made from the sap of the East Indian jaggery palm, or from sugar cane. When made from the jaggery palm, it is often called gur to differentiate it from the sugar cane product. It is usually sold in solid blocks of a brownish-yellow color, and is used extensively in Indian dishes and sweets as well as traditional medicine. It has a much stronger flavor than refined cane sugar, but raw cane sugar may be substituted in many recipes if jaggery is unavailable.
